Veggie Spiralizer GIVEAWAY & Easy Apple Crisp Recipe

Hi guys! I'm sorry for the brief unplanned blog hiatus, but I'm back today with a fun post and a giveaway to make up for it! I'm teaming up with my mom to give one lucky reader a really awesome vegetable spiralizer from The Pampered Chef and the cleaning brush! 

Before we get to the fun part where you can enter to win, I just want to give you guys some info on this product. I was talking about wanting to eat healthier and cleaner with my mom over the Spring and she offered to get me a veggie spiralizer for my kitchen. I'd seen some different spiralizers on Amazon but nothing that looked too special. I agreed and when the product arrived I was shocked by how nice and sturdy it looked, seriously I was expecting a dinky little tool.

I should have known better, my mom has been selling Pampered Chef as a side business for awhile now and seriously all of the tools I've been lucky enough to receive from her are always top quality. She was nice enough to offer to giveaway a spiralizer on my blog as we both agreed this is a tool my readers would also enjoy having (and hearing about)!

But before I get to the giveaway I want to share with you some pictures of something you can create when you put this baby into use. Last Friday my friend Lori was kind enough to test out this tool with me. We decided we wanted dessert so we made an apple crisp! Although, this spiralizer comes with several blades, so you can create veggie ribbons (like we did), veggie noodles, and shredded vegetables. I already know my next recipe is going to be zucchini noodles with pesto and chicken (it is bathing suit season after all).

It was so easy to use, it cut through the apple so easily I was shocked. I can't wait to use it more and try out different recipes, if you'd like more healthy veggie recipes on the blog let me know (especially since the recipe I'm featuring today isn't exactly the healthiest thing you can make with a veggie spiralizer, but just think of all the options you have!)

And here is the apple crisp recipe, (I got the original recipe here, but I have altered it slightly, see below for the version I used):

Ingredients
for the filling 
6 granny smith apples, peeled with ends cut flat
2 tablespoons fresh lemon juice
1/2 cup granulated sugar
1/4 cup brown sugar
1 tablespoon all-purpose flour
1 teaspoon ground cinnamon


for the crisp
1 1/4 cup old fashioned oats
1 cup all-purpose flour
1 teaspoon ground cinnamon
1 cup brown sugar
3/4 cup granulated sugar
1/2 cup butter, melted and cooled
1 teaspoon pure vanilla extract

Crumble mixture evenly over the apples and pears. (Tip: Double the recipe for extra crumble.) Bake in preheated oven for 40-45 minutes or until the crumble topping it golden brown. Serve warm. If desired, top with vanilla ice cream, caramel sauce, or whipped cream.

Preheat oven to 350° F and butter a 9x13 inch baking dish. Prepare the fruit base: In a large mixing bowl, combine apple, pears and lemon juice; toss to coat. In a medium bowl mix granulated sugar, brown sugar, flour and cinnamon. Sprinkle sugar mixture over apples and pears tossing to coat. Pour apple pear mixture into prepared pan, spread into an even layer. Next, prepare the topping: In a large bowl, combine the oats, flour, cinnamon, nutmeg and brown sugar. Mix butter and vanilla together and pour over oat mixture; stir to combine.

Hey there! I hope your weeks are going well, we had really odd weather yesterday, consisting of hurricane-like winds, rain, and it was only 55 degrees! Yuck! I actually took a cab four blocks to get lunch with my friend, it was that bad! It's looking like rain this weekend as well but let's hope the temperature at least improves!

Reading // Luckiest Girl Alive
I just started it, but I've heard great things!

My friend Lauren turned me on to this album, it's really awesome! It reminds me of Kendrick Lamar's 'To Pimp a Butterfly' but with a more retro vibe. It's actually included in my post of '10 Albums to Chill Out to this Summer', check out the post to see what else I'll be jamming to all season.

Eating // Tacos!
Totally loving all the tacos lately. There's a great taco truck in NYC called Domo Taco, check them out if you're in the city for a yummy lunch!

Drinking // Chandon Sparkling Rose
Confession, I'm not a big flat rose fan. But sparkling rose? Totally love. Chandon is my favorite reasonably priced bottle for a treat on the weekends

Watching // Unbreakable Kimmy Schmidt Season 2
I'm loving the new season, it's making me laugh out loud...and Alex even laughed at it...and he's a tough judge! Check it out on Netflix now!

Wearing // Everything striped!
You've seen me recently rocking stripes here, here, and here. I'm a sucker for all things striped! I even just ordered this super affordable (under $25) striped top for summer!

I mean how cute would this look in France or Nantucket this summer? I think I need it right?

10 Albums to Chill Out to this Summer

If you can't tell already I'm a total warm weather person. I went to school in the South for a reason, I was sick of Winter and needed so sunshine! Even though somehow I found my way back to the Northeast I still relish every warm summer day. And there's no better way to get into a summer state of mind than popping on a chill album, cracking open a beer, eating some guac, and sitting outside on a warm night. Here are 10 albums which I will be listening to all summer!

ONE // Malibu by Anderson Paak

This is a new album (released in 2016). It reminds me of 'To Pimp a Butterfly' by Kendrick Lamar but is a little more retro. Some of my favorite tracks include 'Am I Wrong', 'Without You',  and 'Celebrate'

TWO // In Colour by Jamie xx

This album was on repeat for me last summer and I know it will be one of my go-to's this summer as well. Favorite tracks include 'There's Gonna be Good Times', 'Gosh', and 'Loud Places'

THREE // Lemonade by Beyonce

Would this be a 2016 summer playlist without Beyonce's new album? Formation is by far my favorite but I also like 'Don't Hurt Yourself'. Give it a spin and jam out to the Queen.

FOUR // What I Got by Sublime

Sublime is honestly a summertime classic artist. I could put each one of their albums on this list. However, What I Got is probably my favorite to jam out to mostly because it includes 'DJ's' and "40oz to Freedom". Also check out 'Santeria', 'Badfish', and 'Uptown Dub'. Or just pick up a Greatest Hits CD because that will do the trick.

FIVE // Cabin by the Sea by Dirty Heads

Just like Sublime the Dirty Heads are another classic summer group for me. They're the perfect music for sipping a frozen drink while sitting on a beach. Favorite tracks include "Spread Too Thin", "Dance All Night", and I also love "Driftin'" on their album 'Any Port in a Storm'.

SIX // Gossamer by Passion Pit

I LOVE Passion Pit, pretty much any time of year. Gossamer is my favorite Passion Pit album and I love listening to them at work, especially in the summer. Favorite tracks include 'Take a Walk', 'Constant Conversations', and 'Carried Away'.

SEVEN // White Women by Chromeo

They kind of remind me of Daft Punk with lyrics. They're a great band to chill out and dance to all summer long. Favorite tracks include "Jealous", "Sexy Socialite", and "Fall Back 2U"


EIGHT // Green Album by Weezer

This album reminds me of summers in my hometown driving around with my windows down. 'Island in the Sun' is a classic but I also really like 'Smile' and 'Hash Pipe'.

NINE // Lost Souls Like Us by The Benjy Davis Project

This is the most country I'll get (and I think you need a little country on a summer playlist). I saw these guys in concert a few times when I was living in New Orleans and got really into them in college. This album is great and perfect for playing while driving around in your car or having a beer after work. Favorite tracks include 'Mississppi', 'The Aftermath', and 'Send Your Love Down'. I'd also check out their first album for a little more upbeat vibe and tracks like 'Sweet Southern Moon' and 'Cajun Crawfish Boil'.

TEN // Purpose by Justin Bieber

Ok so guys, this album is REALLY GOOD. It's kind of sad, totally danceable, and I can listen to it over and over again. I kind of regret not going to the concert when he came to Philly. I obviously like 'Sorry', 'What Do You Mean', and 'Love Yourself', but also check out 'The Feeling'.

Striped Off-Shoulder Top and White Jeans

Are you sick of seeing me in blue and white yet? Stripes? Ok good, because I'm not planning on stopping anytime soon. This outfit is my newest favorite in my spring/summer rotation. Partly because its so comfortable, and partly because it makes me look both put together and the right amount of quirky thanks to my straw cat purse

I love wearing white jeans year round, but there's something about wearing them in the summer that just seems a little more right. And paired with this long off-shoulder top from Banana Republic it's the perfect outfit for brunch, getting drinks, shopping, or just running errands around the city. 

In other news, we got back from a weekend trip to Pittsburgh late on Sunday and I am working from home this week. My friend Annie arrives to visit from New Orleans late Friday and I'm looking forward to getting to hang out with her this weekend! What're your plans this week?

June Goals

Well, 2016 is almost halfway over and it's the perfect time to reflect on the year so far. It's been an interesting year for me for sure. Between spending more time in NYC than Philly so far this year 2016 has been full of unpredictable turns. I haven't done the best with setting and keeping my monthly goals on the blog this year, but I'm going to try again. It's summer, I'm working from home now, and I can finally go places without bringing a jacket. The world is our oyster! 

So, since I didn't set goals for May (oops) I'm going to just go ahead and set my goals for the month of June. I will be following up at the end of the month to let you all know how I did, wish me luck!

ONE // Go to the gym 3-4 times a week. This one is important, I was doing so well this spring, but in May I was busy at work and with leaving NYC so it kind of got away from me. I'm back at it again this month, my beach vacation is fast approaching!

TWO // Complete my online SAP training course. I am registered with my work for an online SAP training course. This is a popular accounting software system. I'd like to complete this course before I'm done my current project so that I can put the experience on my profile when being chosen for my next assignment. 

THREE // Reconnect with three colleagues throughout the month. Networking is so important for business. It can easily fall away from you if you're not making cognizant efforts to grow and nurture your network. I'd like to work on reconnecting with friends and colleagues throughout the month. 

FOUR // Blog at least four days a week. I'm off to a good start this week! I'd like to keep my momentum up and grow my blog this summer. The best way to work on growing your blog is to consistently put out quality content. If you're not posting people will stop visiting your site! I'd like to maintain a consistent posting schedule this month.

FIVE // Eat healthy lunches and cut down on snacking. Going hand and hand with working out, I also want to get my diet in check this month. Eating out so much in NYC has taken a toll and I've gotten used to restaurant food everyday for every meal. I need to cut back on my snacking and keep my cravings in check. I know if I'm disciplined about keeping myself in line it'll start getting easier!
